What if I just want a menu item to just be a category place holder, and not a new page or new link?

In the page settings panel, there is a checkbox to turn the current page into a 'menu placeholder only'. Creating a menu placeholder will create a menu item that just serves as a placeholder, not necessarily a new page. Other pages can then be filed beneath the placeholder. These placeholders are handy if you would like to make a new section, but you don't want to make a new category landing page. If you click on a menu placeholder link it always takes you to the first sub-page in that section. (Note that this checkbox was added after the page settings screencast and so it is not covered in that screencast)

What if I want to quickly add several pages one after another?

To create many pages at once, the site manager is the tool of choice.
